Francis prides himself most of all in using only the freshest and simplest ingredients grown by local and regional farmlands, as well as quality products imported from France & Italy. His cooking approach is eclectic and fanciful, integrating decades worth of diverse training.
Signature dishes include: Seared and Terrine de Foie Gras, Escargot, Dover Sole, Marinated Grilled Calamari, Grilled Breast of Duck with a Morel Mushrooms, Homemade Tagliolini Pasta, Filet Mignon of Veal with Marsala Wine Sauce & Wild Mushrooms, Kobe Beef Bourguignon and most noteworthy, his beloved Bouillabaisse.

How do I arrange private dining with Francis at my home?
1. Via phone, we can collaborate on the menu and consult on the wine pairing based on available seasonal, local ingredients and your personal preferences.
2. We arrive at your home at the designated time and begin preparations. Generally, expect 2 – 4 hours of preparation and dining, depending on the complexity of the menu and your preferences.
3. We are here to serve you, so you and your guests can sit back, relax and genuinely enjoy a world-class menu and experience!
How do I arrange private dining with Francis at your Surf City location?
Our Surf City location is perfect for intimate dining occasions. It comfortably (and safely) seats 20 guests and has all of the amenities needed.
Like home dining, we co-create the menu based on the availability of seasonal, local ingredients, and your preferences. Also, we are available to consult on wine pairings.
How much does private dining with Francis cost?
Each event is tailored to fit the customer, event and menu. We offer pricing that is fair, reasonable and work within your budget.
Costs to be considered are the number of guests, the menu/food costs, Chef Francis and additional staff (if necessary).
Private dining is performed safely, with every health and CDC precaution applied.
We take every possible step to ensure the safety of our diners and employees, whether at your home or our Surf City restaurant. This includes mask and glove-wearing, routinely disinfecting and sanitizing our equipment, hand-washing, mobile payment options and social distancing.
